WEEKLY MEAL WRAP UP

Well, the summer garden’s slowing crawling to a close here on the urban homestead.  Though, I am not quite looking forward to cooler weather, I am, however, ready for a change and perhaps a new chapter.

Thanks for everyone’s positive comments, they are greatly appreciated.  We are blessed that you find inspiration and hope in our everyday life and in our family’s journey towards a more sustainable future.

We each are juggling enough projects that we could be destined for stardom in the circus!  But that’s the urban homestead life fer ya.  Some kind reader’s commented in amazement “how much we get done.”  It’s all about passion and commitment, well, that’s my opinion anyways.  Besides, we don’t even touch all that we had wanted to do – video logs from the urban homestead, more in depth writings, how to pamphlets (pdf form) and so on and so forth.

With the change of season comes reflection toward the simple refrain “there is a season.”  So in time, my friends, in good time….

Sorry not much in the way of photos from last week’s meals.   Just too darn busy, besides, last week’s meals comprised of A LOT of leftovers.  Keeping meals simple, frugal and homegrown.

Breakfast – homemade pomegranate pancakes (made with HG eggs) and homemade, HG strawberry sauce
Dinner – homemade flour tortillas with homemade spanish rice (homegrown peppers, tomatoes, cilantro) topped with HG peppers, tomatoes, cilantro and organic cheese

SUNDAY

Breakfast – organic oatmeal and homegrown preserves
Lunch –  leftovers from Saturday
Dinner – homemade chili (HG peppers, tomatoes) with homemade organic cornbread

MONDAY

Breakfast – organic oatmeal and homegrown preserves
Lunch – leftover chili
Dinner – leftover chili

TUESDAY

Breakfast – homemade pomegranate pancakes (made with HG eggs) and homemade, HG strawberry sauce
Dinner – homemade vegetarian lasagna with HG tomato sauce

WEDNESDAY

Breakfast – organic oatmeal and homegrown preserves
Lunch – leftover lasagna
Dinner – leftover chili

THURSDAY

Breakfast – organic oatmeal and homegrown preserves
Lunch – summer homegrown vegetables (peppers, squash, tomatoes) with organic pasta
Dinner – homemade HG herb pizza crust topped with cheese, HG eggplant, peppers and tomatoes with HG summer salad (HG cucumbers, tomatoes, peppers)

FRIDAY

Breakfast – organic oatmeal and homegrown preserves
Lunch – hg tomato sandwhich
Dinner – homemade tomato sauce (HG tomatoes, peppers, green onions, herbs) with organic whole wheat pasta topped with organic Parmesan cheese
