Homegrown meal (beans, fried green tomatoes)
Summer goodness continues to grace the plates here on the urban homestead. This week we expect harvesting more eggplant, squash, tomatoes, cucumbers and peppers so will plan meals accordingly.
SATURDAY
B – buckwheat pancakes with homegrown canned peaches
D – homemade w.w. flour tortillas and homemade spanish rice made with homegrown tomatoes, cilantro, green onions, peppers served with sautéed peppers and cheese
SUNDAY
B – homemade granola
L – leftovers from Saturday’s dinner
D – homegrown avocado and tomato, raw cheese sandwich (sprouted bread)
MONDAY
B – homemade granola
L – homegrown corn with fried eggplant patty made with homegrown eggplant, raw cheese and sun cooked organic long grain rice topped with homegrown tomatoes
D – “one dish meal” sun cooked organic long grain rice with raw homegrown vegetables (corn, tomatoes) and steamed homegrown green beans served with homemade lemon butter sauce made with homegrown chives, lemon thyme and lemons.
TUESDAY
B – homemade granola
L – homegrown steamed green beans served with fried eggplant patty made with homegrown eggplant, raw cheese and sun cooked organic long grain rice topped with homegrown tomatoes
D – “one dish meal” sun cooked organic long grain rice with raw homegrown vegetables (corn, tomatoes) and steamed homegrown green beans served with homemade lemon butter sauce made with homegrown chives, lemon thyme and lemons.
WEDNESDAY
B – homemade granola
L – organic mac & cheese with fresh raw homegrown vegetables (peppers, tomatoes, green onions)
D – fried homegrown green tomatoes with homegrown steamed green beans
THURSDAY
B – homemade granola
L – homegrown steamed green beans with organic long grain brown rice
D – pizza topped with homegrown eggplant, peppers, tomatoes, basil and green onion
FRIDAY
B – homemade granola
L – homegrown avocado and tomato sandwich (sprouted bread) with steamed homegrown green beans
D – homemade bread, homemade tomato sauce made with homegrown tomatoes, peppers, green onions, oregano and basil served over w.w. spaghetti
