May’s last ‘Weekly Meal Roundup’ As we head into summer, more and more “heavyweight” crops come into to play here on the urban homestead. Pretty soon we’ll be dealing with ‘too many tomatoes and zucchini’ (think there’s a cookbook with the same title) and our meals will reflect the summer season.
What’s new our plates this week: green beans, basil, zucchini, radishes, tomatoes and blueberries!
SATURDAY
Breakfast – homemade, homegrown blueberry pancakes (made with homeraised eggs) and homemade, homegrown strawberry sauce
Lunch – out (friend’s BD party)
Dinner – out (friend’s BD party)
SUNDAY
Breakfast – homemade granola
Lunch – homemade whole wheat tortillas, homemade spanish rice (homegrown green onions and peppers) with organic black beans topped with homegrown cilantro and raw cheese
Dinner – leftovers from friends BD party
MONDAY
Breakfast – homemade granola
Lunch – homemade, homegrown pea soup (with homegrown herbs – chives and tarragon) with homemade no knead bread
Dinner -out Memorial Day picnic (made homemade, homeraised egg salad, homegrown kale salad and homegrown vegetable pasta salad made with homegrown peppers, broccoli, chives, green onions, tarragon and basil
TUESDAY
Breakfast – homemade granola
Lunch – homemade, homegrown pea soup (with homegrown herbs – chives and tarragon) with homemade no knead bread
Dinner -leftover veg pasta from picnic stretched with homegrown radishes and homegrown swiss chard salad and leftover homemade no knead bread
WEDNESDAY
Breakfast – homemade granola
Lunch – homegrown green beans with homegrown herbs (chives and tarragon) and CA organic rice with homegrown salad
Dinner – same
THURSDAY
Breakfast – homemade granola
Lunch – homemade, homegrown vegetable “pot pie” (homegrown peas, beans, greens and herbs) with homegrown salad
Dinner – homemade, homegrown herb pizza crust topped with homegrown zucchini, green onions, basil and chives and organic cheese with homegrown salad with homegrown radishes
FRIDAY
Breakfast – homemade granola
Lunch – homemade soup, homegrown celery and homegrown peas
Dinner – organic whole wheat pasta with homegrown broccoli and kale, homegrown baby field greens, homemade no knead bread and homegrown/homemade wine
