WEEKLY MEAL WRAP UP
Last week we made a big pot o chili which lasted us several meals. So far Justin hasn't dubbed it "007" chili because it keeps "coming back." (for those of you who aren't familiar with Justin's 007 soup quip you can see it here)
I know winter is hard season for most folks to eat within in range - range of their home that is. Winter does limit the selection but if you were lucky enough to grow a garden or have a farmers market you were able to stockpile your pantry with local or homegrown goods.
Early in the year we launched the 100 foot diet challenge - challenging folks to grow food closer to home. I don't really know how many folks took up the challenge but I can easily estimate it was in the few hundred range.
Winter at the urban homestead means a slight change to the menu and selection. That sometimes means eating the same thing for a couple meals - in a row. I know, heaven forbid we have the same meal twice, three times, even four - that's unhead of these days! People want new and variety at a snap of a finger and this new diet is not normal. We shouldn't eat food out of season, truck in from thousands of miles away. When you start living a local life, when you are tied to the land you learn to eat in season. That's our pioneer spirit kicking into gear as adapt to the long winter like our old fashion counterparts - the Ingalls family

SATURDAY

Dinner- homemade tortillas with homemade spanish rice (homemade peppers, tomatoes) with homegrown peppers and homemade salsa and organic cheese
SUNDAY

Lunch - leftovers
Dinner - community event potluck

Dinner - homemade chili (homegrown tomatoes,green onions, peppers and cilantro) with homemade acorn cornbread
THURSDAY
Breakfast - organic oatmeal and homegrown preserves
Lunch - homemade tomato soup (homegrown tomatoes) with homemade acorn biscuits
Dinner - homemade tomato soup (homegrown tomatoes) with homemade acorn biscuits
FRIDAY
Breakfast - organic oatmeal and homegrown preserves
Lunch - homemade tomato soup (homegrown tomatoes) with homemade acorn biscuits
Dinner - HG salad greens, homemade herb (HG rosemary) no knead bread, homemade tomato sauce (HG tomatoes, peppers, green onions, herbs) with organic whole wheat pasta topped with organic Parmesan cheese

We often eat the same meal several times a week. Since we work from home we need quick meals and heating up a bowl of soup is quick as can be.
We're eating more locally this year. We'll be eating a lot of squash we bought and stored this winter. But I am craving some greens. We've been covered in a blanket of snow for several weeks now, everythings pretty much done in the garden.
The ultimate in "fast food"? Left-Overs! For me, that's soup and bread this time of year. I do have some kale I've been digging out from under the snow. It is amazingly ALIVE and delicious with cornbread.
.......and where can I pick up the cookbook? ; )
100 Ft. diet still alive and well!!
You bet....leftovers!! I plan for them. I check the weather daily, and look for the sunny days. Then I pull out the solar oven and the dehydrated and frozen foods, and cook for a few days worth of meals. I do use the microwave to re-heat, but never to cook. So, I'm doing well early in the winter season. Still plenty of variety, and at least 5-6 meals per week and growing.
I was actually craving mac and cheese the other day and thought I might break down and buy a box of my favorite meal from a previous life. I was shocked!! I used to buy those teenie tiny boxes of nutritional absent foods at 4 for a buck. Now, the same size is $1.25 each!! I walked away,..and told a friend of mine at work about my story. He looked at me funny an said, "Have you been living in a cave!?"
Yep,...I guess so, and I'm pretty pround of it, too.
By the way,....I passed on the box of mac and cheese. Fixed some whole wheat noodles topped with some of my home-made spaghetti sauce instead!!
